Our cuisine carries over 5,000 years of history – Pre-Inca, Inca, Colonial and Republican. We have three centuries of Spanish culinary influence (also influenced by Arabic cuisines), the gastronomic customs brought by the cultures from the African/Atlantic coast and strong influence of the culinary customs of the French who fled the French Revolution. Equally crucial are the influences of the Chinese-Cantonese (called Chifa in Peru), Japanese (Nikkei food) as well as Italian and other European influences (due to immigration between the XIX and XX centuries).

• Starter: Trout and Quinoa Taboule or ‘Causa’ of Chicken with Vegetables
• Main Dish: Aji de Gallina (Tender chicken pieces topped with a smooth yellow pepper cream) or Lomo Saltado (Juicy beef tenderloin strips sautéed in a wok with red onions and fresh tomatoes).
• Dessert: Arroz con Leche (Rice Pudding)
